Thank Me Later-Super Easy Turkey Meatloaf

It's fall and all the flavors of fall can be found on store shelves. I would love to think that my kids will eat butternut squash soup with quinoa croutons...but let's be honest...they care about my love of pumpkin spiced awesomeness about as much as I enjoy stepping on Legos... So when I make this turkey meatloaf and they asked for seconds? Holy candy corn Batman!
I give you the easiest, tasty, kid friendly turkey meatloaf...ever.

Shopping List
1 lb ground turkey
1 box pumpkin corn break croutons
1 small can tomato sauce
1 egg, beaten
1 small onion chopped 
Salt and Pepper

Yes, that is really all. And it can all be found at Trader Joes. Seriously, this is all!

Ok preheat your oven to 350, brown your onions. Set aside to cool off.
Take the ground turkey, pumpkin cornbread croutons, tomato sauce and beaten egg and stir. Add in cooled, cooked onions, salt and pepper and smash together with a wooden spoon or by hand.

Choose your baking dish, I use a log pan, muffin tins or an 8x8 pan lightly greased. Fill in with your mixture and bake for 20-45 min depending on your baking dish. You can top with extra tomato sauce and cracked black pepper if you like that look, but my kids think it's crust and try to peel it off. 

This is a super quick and easily dinner that is good every time!

Flourless Pumpkin Chocolate Chip Cookies

Continuing on our low carb lifestyle...but we need to be realistic...I am a baker and my husband LOVES cookies...so I saw this chick pea cookie recipe and thought, let's try nuts! 
All I had was pumpkin seeds, so here it is! Cookies made without flour and wait for it...they taste amazing!

Supplies
1/2 cup of any roasted nut, salted is ok.
1 tsp baking powder
1 tsp vanilla extract
1 tbsp agave nectar
2 egg yolks
60 semi sweet chocolate chips, about 2 tbsp

Directions 
In your food processor combine all ingredients except for chocolate chips and blend until smooth.
Move mixture to mixing bowl and stir in chocolate chips.
Using 2 spoons, spoon mixture onto a cookie sheet lines with parchment paper.
Bake at 350 degrees for 8-10 minutes.
Makes 8 cookies

Low Carb Spinach Pepperoni Crepe

So it's low carb in the Hines House, and if I eat one more egg...I may run into on coming traffic...So off to the store for a tasty dinner, with no eggs! In the produce isle, what do I see? A NO SUGAR 9 CARB CREPE! BAM! IT'S WHATS FOR DINNER!

Supplies
-Store bought crepes
-Turkey Pepperoni
-Shredded Cheese
-Spinach

...and that's all!


Directions
Heat your pan, saute your spinach, the amount will vary based on how much you want or how many you are making, the carb count is the same no matter what...0 carbs for the filling, 9 for the crepe!
Remove the spinach, place your crepe in the pan, use cooking spray or butter to prevent sticking.  Heat add the spinach, cheese and pepperoni. Fold over the crepe side and plate!
It's so good and so easy...I think i'll try pizza crepes next!

White Chocolate Cherry Pecan Muffins



So I love the cool weather, mostly because I love to bake and won't turn the oven on when it's hot out. I recently was at Trader Joe's and saw a super yummy bag of dried cherries and my baking wheels started turning...Cherries...White Chocolate Chips and Pecans. Hope you like these, because if you don't my kids are more than willing to eat yours too! 
Supplies 
2 Cups White Flour
 2 tsp baking powder 
1/2 tsp salt
 3/4 c. white sugar 
1 egg 
1/4 c. vegetable oil 
1 c. milk
 1/2 c. dried cherries 
1/2 c. white chocolate chips 
1/4 c. chopped pecans 


  • Preheat oven to 400. 
  • In a large mixing bowl, combine flour, baking powder, salt and sugar mix together. 
  • In another bowl, whisk egg, oil and milk. Add liquid mixture to dry ingredients and combine. 
  • Add in cherries, chocolate chips and pecans, mix well.
  • Spoon mixture into 12 muffin liners and bake for 25 min, or until tops are golden brown.

Super Mom Morning Smoothie

Sooo good, and good for you!

Start with:
1/2 cup Pineapple Mango Juice
1/2 cup Raspberries
1 tbsp Coconut Spread
1 Serving of your favorite protein powder 
  (I use Aria Women's Protein Powder)

Blend all ingredients until smooth and add ice if you like!

This is super filling, under 200 calories and has 14 grams of protein and 7 grams of fiber!

Crock Pot BBQ Ribs

These may be the easiest ribs I have ever made in my life!
A few ingredients and a crock pot is all you need!
 
 
 
 
Ingredient's
 
  • Boneless Pork Ribs, or any ribs!
  • 1 bottle of your favorite BBQ sauce
  • 1 box chicken or beef stock
  • Garlic seasoning
  • Salt and pepper
 
(TOLD YOU, SO EASY!)
 
 
Place all the ingredients in the crockpot, add water until meat is completely covered, cook of high for 5 hours.
These will be super tender, and Delicious, ENJOY!

Sweet Potato Beef Stew

This is a great Beef Stew, slow cooked and tender beef, tons of flavor and the added goodness of sweet potatoes.This is definaely a family favorite, great for parties. After the meat is cooked, you can finish on the stove or in the Croc Pot! Enjoy!






Ingredient List
1 lb cubed stew beef or chicken
1 quart chicken or beef  stock
2 large sweet potatoes
2 cups baby carrots
2 cups celery
1 cup mushrooms
1/2 cup chopped sweet onion
2 cups water
1 packet stew seasoning
1/8 cup flour
salt and pepper

Coat the beef cubes in flour and brown in a large pot, salt and pepper.  Add quart of stock and simmer on medium low for 1 hour. Add chopped sweet potato, carrots and onions, cook for 30 more minutes.  Add all remaining ingredients-celery, mushrooms, seasoning packet and water, bring to a boil, reduce heat and simmer for 30 more minutes.  If using a Croc Pot, cook all ingredients on high for 5 hours.
